Cauliflower, Falafel & Mushroom Bowl

Ingredients
(Serves 2)

6 Bite Me Fine Foods Vegetarian Falafels
2 teaspoons hemp seeds

Cauliflower puree:
½ head cauliflower
1-tablespoon butter
3 tablespoons organic chicken or veggie stock
Salt to taste

Mushrooms:
500g mushrooms
½ cup baby spinach
1-teaspoon garlic
1-tablespoon butter
Salt + pepper to taste

Method

1. Chop cauliflower into florets and boil for 30 minutes or until soft.
2. After 25 minutes, sauté mushrooms in butter and garlic, add baby spinach. Season with salt and pepper.
3. In a sandwich press, heat falafels until cooked on each side.
4. Remove cauliflower from the boil, drain and blend with a bar-mix or food processor. Once pureed, stir in butter, stock and season with salt.
5. Assemble bowl (halve mixture and add 3 falafels per bowl) and enjoy.
