Mediterranean Stuffed Sweet Potato

With Bite Me Fine Foods Organic Falafels

Ingredients

  • 4 medium sweet potatoes
  • 8 Bite Me Fine Foods Spicy Quinoa Falafels
  • 1 1⁄2 cup baby spinach
  • 8 olives
  • 8 sundried tomatoes
  • Feta (optional)
  • Small head of broccoli (or 8 small florets)
  • 2 tbsp olive oil
  • 1 tsp salt

Dressing:

  • 4 tbsp olive oil
  • Squeeze fresh lemon juice 1 tsp minced garlic
  • Salt + Pepper to taste

Method

  1. Preheat oven to 200 degrees.
  2. Using a brush, roughly brush over sweet potatoes with olive oil (about 1 tbsp).
  3. Bake for 40-50 minutes or until well cooked.
  4. Steam broccoli until soft.
  5. Heat 1 tablespoon of olive oil in a saucepan on low heat. Fry Spicy Quinoa Falafels for 1minute on each side or until crisp.
  6. Remove sweet potato from heat and allow to cool before stuffing.
  7. Slice an ‘x’ in each sweet potato, scoop out a small amount of middle of potato
    and stuff with baby spinach, olives, sundried tomato and falafel. Sprinkle with
    feta, and season with salt + pepper.

For the dressing:
In a small bowl, whisk garlic, olive oil and lemon juice with a fork. Drizzle over sweet potatoes before serving.
