Vegetarian Breakfast Muffins

With Bite Me Fine Foods Green Lentil Falafels

Ingredients

(Serves 6)

  • 4 Bite Me Fine Foods Green Lentil Falafels (slice into quartes)
  • 6 organic free-range eggs
  • 1⁄2 cup organic cows milk
  • 1 zucchini, grated
  • 1 spring onion, finely chopped
  • 1 clove crushed garlic
  • 4 large mushrooms, sliced
  • Handful of baby spinach
  • Salt + Pepper

Method

  1. Preheat oven to 180 degrees.
  2. In a large saucepan, sauté spring onion mushrooms and garlic.
  3. Add Bite Me Fine Foods Green Lentil Falafels, grated zucchini and baby spinach.
  4. In a medium size bowl, whisk eggs; add milk and season with salt and pepper.
  5. Line muffin tin (6) with baking paper and divide up veggie mixture. Pour over egg mixture and bake in oven for 25 minutes or until cooked.
