With Bite Me Fine Foods Green Lentil Falafels

Ingredients
(Serves 6)
- 4 Bite Me Fine Foods Green Lentil Falafels (slice into quartes)
- 6 organic free-range eggs
- 1⁄2 cup organic cows milk
- 1 zucchini, grated
- 1 spring onion, finely chopped
- 1 clove crushed garlic
- 4 large mushrooms, sliced
- Handful of baby spinach
- Salt + Pepper
Method
- Preheat oven to 180 degrees.
- In a large saucepan, sauté spring onion mushrooms and garlic.
- Add Bite Me Fine Foods Green Lentil Falafels, grated zucchini and baby spinach.
- In a medium size bowl, whisk eggs; add milk and season with salt and pepper.
- Line muffin tin (6) with baking paper and divide up veggie mixture. Pour over egg mixture and bake in oven for 25 minutes or until cooked.
