Cauli Quesadilla with Roasted Capsicum Queso

Ingredients
Quesadilla:
4 corn tortillas
1 packet of Bite Me Fine Foods Cauliflower Burgers
1 cup baby spinach leaves
3/4 cup vegan cheese, grated
Queso:
1 cup cashews, soaked in water for 1 hour then drained
1 whole roasted capsicum
1/8 cup water
1 tbsp coyo
1/8 cup nut yeast
1/2 tsp salt flakes
1/8 tsp dried oregano
1/8 paprika powder
1/8 tsp garlic powder
1. To make the queso, place all ingredients into a blender and combine until smooth and creamy. Spoon into a bowl and set aside.
2. To make the quesadillas, take two tortillas to use as the bases then top each of them with a cauliflower burger, some spinach leaves and the cheese. Place the two other tortillas on top to sandwich the filling in.
3. Place a pan over medium heat and add a drizzle of oil. Add the quesadillas to the pan and cook for a few minutes until golden underneath. Flip and cook other side.
4. To serve, cut quesadillas into halves, then enjoy with the queso dip.
