Spicy Falafel Nachos

With Bite Me Fine Foods Falafels

Ingredients

  • 4-6 Bite Me Fine Foods Spicy Quinoa Falafels
  • 1⁄2 Spanish onion, sliced
  • 1 spring onion, chopped
  • 1⁄4 avocado
  • 1 Lebanese cucumber
  • 6 cherry tomatoes
  • 1 can organic Italian tomatoes
  • 1 can organic kidney beans
  • 2 rice wraps
  • 1⁄2 lime
  • 1⁄2 tsp paprika
  • 1⁄2 tsp cumin
  • 1 tsp fresh parsley
  • Parmesan (optional)

Method

  1. Heat olive oil in a medium sized fry pan. Cook onion, can of tomatoes and kidney beans. Add cumin and paprika. Reduce heat. Season with salt/pepper, set aside.
  2. Slice rice wraps into quarters and lightly grill until crisp.
  3. Meanwhile, chop cucumber, spring onion and tomatoes.
  4. In a small saucepan, heat 4-6 Bite Me Fine Foods Spicy Quinoa falafels for 1 minute on each side.
  5. Assemble nachos – add tomato/bean mixture to a bowl, topped with falafels, cucumber, tomato and spring onion. Add parsley, avocado, fresh lime juice, parmesan and serve with crisp rice ‘chips’.
