Tuscan Toast

Ingredients
2 slices wholegrain sourdough
2 Bite Me Fine Foods Brown Rice Lentil Patties
4 slices haloumi
1-2 tbsp Sun-dried tomato pesto
4 mushrooms, sliced
2 cherry tomatoes, sliced
1/2 zucchini, sliced
Fresh rocket (to garnish)
Olive oil (for cooking)
Method
1. In a fry pan, sauté sliced mushrooms and zucchini. When almost browned, add Brown Rice Lentil Patties and fry until crisp on both sides. Remove from heat.
2. While pan is still hot, fry haloumi slices until golden on both sides. While this is cooking, put sourdough in toaster.
3. Spread sundried tomato pesto onto sourdough. Add haloumi, mushrooms, zucchini, Brown Rice Lentil Patties and top with fresh basil
