Zucchini Pesto ‘Noodles’ with Falafel

Ingredients

  • 3 organic zucchinis
  • 1 packet of Bite Me Fine Foods Vegetarian Falafels
  • 18-20 fresh basil leaves
  • 2 handfuls rocket
  • 1 tbsp crushed pistachio nuts
  • Squeeze fresh lime juice
  • 4 tbsp olive oil + 1⁄2 clove of garlic (OR 2 tbsp garlic infused olive oil + 2 tbsp extra virgin olive oil).
  • 1⁄2 spring onion, sliced
  • 1 tbsp nut butter (almond butter is a good option)

Method

  1. Use a vegetable spiriliazer to make zucchini noodles by putting noodles through spiralizing process.
  2. In a high power blender combine basil, rocket, pistachio nuts, lime juice, spring onion, nut butter, garlic and olive oil. Blend mixture until well combined.
  3. In a large bowl, toss pesto mixture over zucchini spirals.
  4. Heat falafels in a sandwich press or on the stove top for 1 minute and serve on top of zucchini noodles. Garnish with extra pistachios and rocket.
