Green pasta with organic falafels

Ingredients:

250g wholemeal spaghetti
3-6 Bite Me Fine Foods Organic Vegetarian Falafels
1 cup rocket
1 cup spinach
Handful of fresh basil leaves
2 tbsp green pesto
1 tbsp cream cheese
1 tbsp Parmesan

 

Method:

1. Boil spaghetti and strain once cooked through.
2. Blend rocket and spinach in a high-speed blender. Add to a small bowl and stir in pesto, cream cheese and Parmesan.
3. Heat falafels in a sandwich press until crisp on both sides.
4. Stir greens mixture into spaghetti. Serve with fresh basil and falafels.

Lemon & Parsley Pasta

Stay cosy with this zesty Lemon & Parsley Pasta dish. It’s easy to make from pantry staples, and a few fresh ingredients from the veggie patch!

 

Here’s what you’ll need:

250g gluten free or wholegrain spaghetti
6 Bite Me Fine Foods Organic Brown Rice Lentil Patties
60g parmesan cheese
1/2 cup lemon juice
1/3 cup parsley, chopped finely
Zest from 1/4 lemon
1 clove garlic, minced
Drizzle of olive oil
Salt and pepper to taste

Method:

1. Boil water in saucepan, add a pinch of salt and spaghetti. Cook for 6-8 minutes or until cooked through. Strain and set aside.
2. While pasta is boiling, add parmesan, lemon juice, parsley, lemon zest, garlic, olive oil and salt + pepper to a small bowl. Mix until well combines.
3. Heat Bite Me Fine Foods Brown Rice Lentil Patties in a sandwich press until crisp on both sides.
4. In a large bowl, toss spaghetti in lemon/parmesan mixture until coated.
5. Add gently stir in falafels. Top with a sprinkle of parmesan and enjoy.

Spicy Vegan Tacos

Spicy Tacos with Bite Me Organic Spicy Quinoa Falafels

What you’ll need:

6 Bite Me Fine Foods Organic Spicy Quinoa Falafels
1/2 avocado, smashed
2 truss tomatoes, chopped
1/4 purple cabbage, chopped
1/4 red onion, thinly sliced
2 tortillas
1 tsp fresh lemon juice
1 tbsp chopped coriander
1 tbsp marinated feta
Vegan mayo (to serve)

Method:

1. To prepare salsa, combine purple cabbage, tomatoes, red onion and coriander in a small bowl. Add lemon juice.
2. Head Bite Me Fine Foods Organic Spicy Quinoa Falafels in a sandwich press until golden on both sides.
3. To make the tacos, add salsa mixture, 3 Spicy Quinoa Falafels, feta and avocado to a tortilla. Drizzle with vegan mayo to serve (makes 2 tacos).

Pesto Gnocchi w/ Brown Rice Lentil Patties

What you’ll need:

 

500g gnocchi
1 clove garlic, minced
1-2 tbsp fresh lemon juice
2 tbsp chives, finely chopped
1 tbsp parsley, finely chopped
1 tbsp pine nuts
1 1/2 cups baby spinach
1/4 cup Parmesan
Salt + pepper
Olive oil

 

Method:
1. Boil gnocchi in salted water for 2-3 minutes. Remove from heat and strain.
2. Combine garlic, lemon juice, parsley, pine nuts and chives in a small bowl. Set aside.
3. Add olive oil to a fry pan, add gnocchi and pine nuts. Fry for 3 minutes or until crisp.
4. Meanwhile, add Organic Bite Me Fine Foods Brown Rice Lentil Patties to a small fry pan, and fry until crisp on both sides.
4. Remove gnocchi from heat. Stir in bowl of pesto mixture, parmasen and season with salt + pepper.
5. Top with Bite Me Fine Foods Organic Brown Rice Lentil Patties and serve!

Slaw & Lentil Burger

Try this delicious Slaw & Lentil Burger for a quick and tasty dinner!

Ingredients

1 Bite Me Fine Food Vegan Lentil Burger Pattie
1 burger bun
1 portobello mushroom
1/2 cup shredded purple cabbage
1/2 cup shredded cabbage
1/2 medium carrot grated
2 tbsp vegan mayonnaise
Salt + pepper
Olive oil (or butter)

Method

1. Fry mushroom in butter or olive oil, season with salt + pepper and fry until cooked on both sides.
2. To make the slaw, combine cabbage and carrot in a small bowl. Add mayonnaise and coat the slaw mixture.
3. In a sandwich press, heat Bite Me Fine Foods Vegan Lentil Burger Pattie until crisp on both side.
4. Compile burger by adding the slaw, burger Pattie and mushroom to the burger bun. Drizzle with mayonnaise to serve.
5. Enjoy!

To make the salad you’ll need:

1 cucumber, sliced
1 punnet cherry tomatoes, sliced
1/4 red onion, sliced
2 Tbsp soft feta
Fresh lemon juice
Dried oregano
Salt + pepper

Method

Ingredients

1 Bite Me Fine Foods Veggie Chickpea Burger Pattie

1-2 savoy cabbage leaves

1/2 cup fresh rocket

1/4 avocado

1 Wholegrain burger bun

 

For the dressing:

1/2 cup fresh basil leaves

1/2 cup baby spinach

1/4 cup parmesan

2 tbsp toasted pine nuts

1 clove garlic, minced (or 1/2 clove if you prefer less garlic)

1 tsp hemp seeds

1 tsp lemon juice

1/8 cup olive oil

1/4 cup vegan mayo

Salt + pepper to taste

 

 

Method

  1. Combine all dressing ingredients in a high speed blender. Once combined, adjust consistency with olive oil. Season with salt and pepper.
  2. Heat Bite Me Fine Foods Veggie Chickpea Burger Pattie in a sandwich press for 5 minutes, or until crisp on both sides.
  3. Compile burger – add Veggie Chickpea Burger Pattie, cabbage leaves, rocket, sliced avocado and drizzle basil dressing onto bun.

Tomato & Falafel Pizza canapés

Ingredients
4 pizza bruschetta base
3 Bite Me Fine Foods Organic Vegetarian Falafels
2 tbsp tomato paste
4 cherry tomatoes, sliced
3 feta-stuffed green olives, sliced
2 tbsp fresh basil leaves, sliced
3/4 zucchini, sliced
1/4 cup Mozzarella or vegan cheese
Drizzle of balsamic vinegar glaze

Method
1. Preheat oven to 200 degrees.
2. Slice bruschetta bases into halves and spread with tomato paste.
3. Add sliced zucchini, tomato slices and olives. Sprinkle Bite Me Fine Foods Organic Vegetarian Falafels (to resemble bread crumbs) over top of pizza, followed by sliced basil and cheese.
4. Bake for 10-15 minutes or until cheese has melted.
5. Remove from oven and drizzle with balsamic vinegar glaze.

Garlic Wedges with Spicy Quinoa Falafel

Ingredients:

4 Bite Me Fine Foods Spicy Quinoa Falafels
6 large potatoes
1 avocado
1 tsp sweet paprika
2 tsp minced garlic
Sea salt
3-4 tbsp olive oil

Method:


1. Preheat oven to 200 degrees.
2. Slice potatoes into wedges (1/8)
3. In a small bowl, mix olive oil, sweet paprika, garlic and salt to taste.
4. Put potato in a medium sized bowl, coat with garlic and olive oil mixture until all ‘wedges’ are coated.
5. Place on a baking tray (lined with baking paper).
6. Roast for 40 minutes (and turn after 20 minutes).
7. Heat Spicy Quinoa Falafels in a sandwich press until crisp on both sides.
8. Smash avocado and add salt to taste.
9. Remove wedges from oven once crisp on both sides. Serve with smashed avocado and falafels.
