Cheese, tomato & falafel canapés

They are a refreshing, light snack!

 

 

Ingredients
3 slices of toasted sourdough, halved
6 Bite Me Fine Foods Organic Vegetarian Falafels
1 Tbsp fresh mint, chopped
1/4 cup cream cheese
1/4 cup cherry tomatoes, sliced
Squeeze of fresh lime juice
Salt + pepper
Dried oregano

 

Method
Top toast halves with a falafel, cherry tomatoes, mint and season with salt + pepper. Squeeze with fresh lime juice and serve.

Mediterranean Canapés

Ingredients

6 Bite Me Fine Foods Organic Vegetarian Falafels
1 bunch of fresh parsley
1/2 cup pomegranate seeds
1/4 cup pistachios
Squeeze of fresh lemon juice
Salt + pepper

Method

1. Chop parsley, and add to a small bowl with pomegranate seeds and crushed pistachios.
2. Squeeze with lemon juice and season with salt and pepper.
3. Heat falafels in a sandwich press until crisp on both sides.
4. Top falafels with a spoonful of pomegranate mixture.

Mediterranean Falafel Flatbread

Ingredients:

2 turkish bread rolls, sliced in half
4 Bite Me Fine Foods Vegetarian Falafels
1 tomato, sliced
1/2 avocado, sliced into cubes
1/2 red onion, thinly sliced
1/2 capsicum,sliced
2 tbsp taziki
1 tbsp crumbled feta

Method:

1. Grill Turkish bread halves (4 halves) until crisp.
2. Remove from the grill and spread with taziki.
3. Crumble 1 falafel over each Turkish bread half.
4. Top with tomato, capsicum, avocado an onion.
5. Sprinkle with crumbled feta. Slice into halves and serve.

Carrot Hummus

Ingredients

1 can organic chickpeas (400g), drained
Bite Me Fine Foods Falafels or Veggie Patties
Sourdough to serve
3 tbsp organic tahini (hulled)
1 tsp minced organic garlic
Juice from 1 lemon
1/2 carrot, grated
1 tbsp water
2 tbsp olive oil
Salt to season

Method

1. Combine chickpeas, tahini, lemon juice, garlic, water, carrot and olive oil in a blender.
2. Blend well until combined. Season with salt.
3. Heat falafels in a sandwich press and serve on sourdough with hummus.

Zuchinni & Falafel Fritters

Ingredients

  • 5 Bite Me Fine Foods Vegetarian Falafels
  • 2 small-medium organic zucchinis
  • 2 organic eggs
  • 1 spring onion, finely chopped
  • 1 tbsp fresh parsley, chopped
  • Salt + Pepper to taste

Method

  1. Grate zucchini and squeeze to drain excess liquid.
  2. Place in a medium sized bowl, add spring onion and parsley. In a small bowl, mash falafels with a fork or potato masher until fine and crumbly. Add to zucchini mixture.
  3. Whisk 2 eggs and add to zucchini mixture. Season with salt and pepper.
  4. In a medium size fry pan, heat olive oil on medium heat. Spoon zucchini mixture and flatten with a fork.
  5. Cook on each side until cooked through and golden.

Spicy Falafel Nachos

Ingredients

  • 4-6 Bite Me Fine Foods Spicy Quinoa Falafels
  • 1⁄2 Spanish onion, sliced
  • 1 spring onion, chopped
  • 1⁄4 avocado
  • 1 Lebanese cucumber
  • 6 cherry tomatoes
  • 1 can organic Italian tomatoes
  • 1 can organic kidney beans
  • 2 rice wraps
  • 1⁄2 lime
  • 1⁄2 tsp paprika
  • 1⁄2 tsp cumin
  • 1 tsp fresh parsley
  • Parmesan (optional)

Method

  1. Heat olive oil in a medium sized fry pan. Cook onion, can of tomatoes and kidney beans. Add cumin and paprika. Reduce heat. Season with salt/pepper, set aside.
  2. Slice rice wraps into quarters and lightly grill until crisp.
  3. Meanwhile, chop cucumber, spring onion and tomatoes.
  4. In a small saucepan, heat 4-6 Bite Me Fine Foods Spicy Quinoa falafels for 1 minute on each side.
  5. Assemble nachos – add tomato/bean mixture to a bowl, topped with falafels, cucumber, tomato and spring onion. Add parsley, avocado, fresh lime juice, parmesan and serve with crisp rice ‘chips’.

Mediterranean Stuffed Sweet Potato

Ingredients

  • 4 medium sweet potatoes
  • 8 Bite Me Fine Foods Spicy Quinoa Falafels
  • 1 1⁄2 cup baby spinach
  • 8 olives
  • 8 sundried tomatoes
  • Feta (optional)
  • Small head of broccoli (or 8 small florets)
  • 2 tbsp olive oil
  • 1 tsp salt

Dressing:

  • 4 tbsp olive oil
  • Squeeze fresh lemon juice 1 tsp minced garlic
  • Salt + Pepper to taste

Method

  1. Preheat oven to 200 degrees.
  2. Using a brush, roughly brush over sweet potatoes with olive oil (about 1 tbsp).
  3. Bake for 40-50 minutes or until well cooked.
  4. Steam broccoli until soft.
  5. Heat 1 tablespoon of olive oil in a saucepan on low heat. Fry Spicy Quinoa Falafels for 1minute on each side or until crisp.
  6. Remove sweet potato from heat and allow to cool before stuffing.
  7. Slice an ‘x’ in each sweet potato, scoop out a small amount of middle of potato
    and stuff with baby spinach, olives, sundried tomato and falafel. Sprinkle with
    feta, and season with salt + pepper.

For the dressing:
In a small bowl, whisk garlic, olive oil and lemon juice with a fork. Drizzle over sweet potatoes before serving.

Gluten Free Falafel Rolls

Ingredients

  • 1 packet of Bite Me Fine Foods Vegetarian Falafels 1 tbsp poppy seeds
  • 1tbsp sesame seeds
  • 1 tbsp olive oil

For the thick-cut pastry:

  • 2 cups gluten free plain flour
  • 1⁄2 tsp baking sods
  • 1⁄4 cup chilled water
  • 200g organic grass fed butter
  • (Alternatively you can use pre-made gluten free puff pastry sheets)

Method

  1. Preheat oven to 200 degrees.
  2. In a medium size bow, combine flour and baking soda.
  3. Add butter and knead until mixture is crumbly.
  4. Add water and continue to knead until dough forms.
  5. Place in refrigerator for 5-10 minutes or until firm.
  6. With a rolling pin, roll 1 tbsp of dough mixture at a time in a rectangle. Place Bite Me Fine Foods falafel in the middle and fold over pastry and press down on each side to form a pouch. Make sure pastry is quite thin, unless you prefer it thick.
  7. Continue for remaining Falafels in the packet and place on lined baking tray.
  8. Lightly brush each falafel roll with olive oil and sprinkle with poppy and sesame seeds.
  9. Bake for 20 minutes or until crisp.
  10. Serve with organic tomato sauce!
