A Healthy Start To Your Day

Ingredients
- 3 organic zucchinis
- 1 packet of Bite Me Fine Foods Vegetarian Falafels
- 18-20 fresh basil leaves
- 2 handfuls rocket
- 1 tbsp crushed pistachio nuts
- Squeeze fresh lime juice
- 4 tbsp olive oil + 1⁄2 clove of garlic (OR 2 tbsp garlic infused olive oil + 2 tbsp extra virgin olive oil).
- 1⁄2 spring onion, sliced
- 1 tbsp nut butter (almond butter is a good option)
Method
- Use a vegetable spiriliazer to make zucchini noodles by putting noodles through spiralizing process.
- In a high power blender combine basil, rocket, pistachio nuts, lime juice, spring onion, nut butter, garlic and olive oil. Blend mixture until well combined.
- In a large bowl, toss pesto mixture over zucchini spirals.
- Heat falafels in a sandwich press or on the stove top for 1 minute and serve on top of zucchini noodles. Garnish with extra pistachios and rocket.
