Haloumi & Falafel Salad

Ingredients
6 Bite Me Fine Foods Vegetarian Falafels
80g baby spinach, chopped
1/2 cup wholewheat couscous
1/2 cucumber, sliced
1 zucchini, peeled
1/2 cup parsley
1 1/2 spring onions, sliced
150g haloumi
2 tbsp balsamic vinegar
Olive oil for cooking
Method
1. Combine spinach, cucumber, zucchini, spring onions, parsley in a salad bowl.
2. Add 1/2 cup of boiling water to couscous and soak for 5 minutes. Add to salad.
3. In a fry pan, fry falafels in olive oil until cooked and crisp on each side. Add to salad.
4. Grill haloumi, slice and add to salad.
5. Drizzle salad with balsamic vinegar and toss.
