Purple Cabbage & Sweet Potato Salad

Ingredients
1/2 purple cabbage, chopped
4-6 Bite Me Fine Foods Sweet Potato Rosti’s
1 cup macadamia nuts, roughly chopped
Juice from 1 fresh lemon
1 tsp honey
Olive oil
Salt + pepper
Method
1. In a medium size bowl, toss purple cabbage in olive oil.
2. Place on oven tray. Grill on high, checking every few minutes. Remove from the grill and turn over to ensure all sides are cooked (put back under grill until crisp).
3. Set salad mixture aside and allow to cool.
4. In a small bowl, mix honey with lemon juice.
5. Place chopped macadamia nuts under the grill until browned and crisp.
6. Stir in honey/lemon mixture and macadamia nuts into cabbage salad. Season with salt and pepper.
7. In a sandwich press, heat Sweet Potato Rosti’s until golden and crisp on both sides. Add to salad and enjoy!
