Cous Cous Salad with Falafel & Radish

Ingredients
1 cup pearl cous cous
4 Bite Me Fine Foods Wild Rice Falafels
1 cup vegetable stock
4 mini capsicums, sliced
1/2 large cucumber, sliced
3 radishes, sliced
1/2 onion, sliced
5 mini cherry tomatoes, halved
Small bunch of mint
Lemon juice
Olive oil
Method
1. In a small sauce pan, bring stock to the boil. Add cous cos and simmer for 8-10 minutes.
2. Remove from heat and allow to cool.
3. Heat falafels in a sandwich press or saucepan.
3. Stir in vegetables and drizzle with olive oil and a squeeze of lemon to taste.
