Falafel & Celery Stuffed Mushrooms
Ingredients
3 large portobello mushrooms
3 Bite Me Fine Foods Vegetarian Falafels
1/2 onion, sliced
1/4 capsicum
1 stalk celery
2 tbsp tamari or soy sauce
1 tbsp parsley, chopped
Method
1. Preheat oven to 180 degrees.
2. Remove stalk from mushroom. Coat with olive oil, place on tray and cook for 10-15 minutes or until slightly withered.
3. Sauté onion, capsicum and celery in olive oil and tamari in a small fry pan.
4. Slice Falafels into quarters/crumble and stir in veggie mixture for 1-2 minutes.
5. Remove mushrooms from oven and top with veggie mixture and parsley.
