Falafel Pitas

A vegetarian dish perfect for summer nights or a light meal.
Ingredients:
8 Bite Me Fine Foods Vegetarian Falafels
4 Pitas or Turkish style bread
3 cucumbers, diced
3 tomatoes, diced
1 red onion, thinly sliced
150g feta cheese, cubed
1/4 cup fresh parsley, chopped
1 cup taziki
2 tsp oregano (dried)
Salt + Pepper
Method:
1. Create salad mixture by combining cucumber, tomato, onion, parsley and feta. Season with dried oregano and salt + pepper in a salad bowl.
2. Heat Bite Me Falafels in a sandwich press until crisp on both sides.
4. Heat pita bread in a sandwich press until slightly golden.
5. Serve salad mixture on top of pita bread spoon salad mixture into pita pockets.
6. Add Falafels and a spoonful of taziki.
