Loaded Sweet Potato Fried with Brown Rice Lentil Patties

Ingredients
1 medium size sweet potato, sliced into wedges
1 spring onion, sliced
1 gourmet tomato, sliced
4 Bite Me Fine Foods Brown Rice Lentil Patties
1/4 Parmesan
Sprinkle of mozzarella cheese
Sea salt
Olive oil for baking
1 tbsp coriander, chopped
Method
1. Preheat oven to 200 degrees.
2. Coat sweet potato ‘fries’ in olive oil and season with salt. Place on an oven tray.
3. Heat for 15 minutes or until cooked through.
4. Remove from the heat.
5. Transfer fries to a baking dish, add Green Lentil Falafels and sprinkle with cheese.
6. Grill for 5 minutes or until cheese melts.
7. Sprinkle with spring onion, tomato and coriander.
