Mexi-Mushroom Burger
Ingredients
Burgers
2 Sweet Potato Corn Crunch Burgers
4 Large Flat Mushroom
1 Baby Cos Lettuce
1⁄2 Red Onion, sliced
1⁄2 Tomato, sliced
Sides
1 tsp Extra Virgin Olive Oil
1 Sweet potato, cut into wedges
1⁄2 tsp Cumin
Pinch Salt
Guacamole
1⁄2 Avocado
1⁄2 Lime, juiced
1⁄4 tsp Paprika
1⁄4 tsp Cumin
Method
1. Pre-heat oven to 180°C and prepare a baking tray.
2. Toss sweet potato in oil, cumin and salt. Spread out on an oven tray and roast for 20-25
minutes or until crisped.
3. Meanwhile, combine guacamole ingredients and set aside.
4. Cook burgers as per packet instructions.
5. Top a mushroom with burger, guacamole, lettuce, onion, tomato and top with additional
mushroom top.
6. Serve burger with a side of sweet potato wedges.
