Pear & Nectarine & Falafel Salad

Ingredients:
5 Bite Me Fine Foods Wild Rice Falafels
1/4 cup sliced almonds
2 cups organic baby spinach
2 cups organic cos lettuce
1 yellow nectarine, sliced
1 nashi pear, sliced
1/2 avocado, sliced
Dressing:
1/2 cup raspberries
1 tbsp apple cider vinegar
1 tbsp balsamic vinegar
2 tbsp olive oil
Method:
1. Combine baby spinach and cos in a medium bowl.
2. Add sliced almonds, nectarines, pear and avocado.
3. Heat falafels in a sandwich press until crisp on both sides.
4. To make the vinegarette, blend raspberries (with a bar mix) and stir in olive oil, balsamic vinegar and apple cider vinegar.
5. Drizzle dressing on salad.
