Rainbow Summer Salad with Spicy Quinoa Falafel

Ingredients
1 cos lettuce, shredded
6 Bite Me Fine Foods Spicy Quinoa Falafels
1/2 red onion, sliced
1/2 avocado, cubed
6 strawberries, sliced
1/3 cup pecan nuts, chopped
4 baby carrots, slice
1 tbsp white chia seeds
2 tbsp marinated feta
Dressing
1/4 cup olive oil
1 tbsp Apple cider vinegar
1 tbsp honey (or to taste)
1/2 tsp Dijon mustard
Method
1. Combine all salad ingredients in a salad bowl.
2. In a sandwich press, heat Spicy Quinoa Falafels on both sides until golden.
3. Add Falafels to salad.
4. Combine olive oil, apple cider vinegar, honey and Dijon mustard in a small mixing bowl. Whisk until combined and drizzle over salad mixture.
