Tabouli & Falafel Canapes

Ingredients:
10 Bite Me Fine Foods Vegetarian Falafels
2 baby cos lettuce
1 bunch parsley, chopped
1 spring onion, chopped
1 cucumber, thinly sliced
1 tomato finely sliced
90g haloumi
Drizzle of olive oil
Method:
1. Thinly slice all salad vegetables and add to a bowl. Drizzle with olive oil.
2. In a small fry pan, grill haloumi until golden on both sides. Remove from heat, allow to cool and slice into small squares.
3. Remove cos lettuce leaves, and spoon tabouli mixture into lettuce leaf.
4. Heat Falafels in a sandwich press until crisp on both sides.
5. Place 1 Falafel and haloumi square on each lettuce cup.
